Red Velvet Cupcakes

Red Velvet Cupcakes










        This weekend I made Red velvet cupcakes for my mothers birthday. She has been wanting some red velvet so I did it for her. My hands are still dyed red. Those things require so much food coloring! But of course, Thery are delicous. So if you would like to learn how to make some Red Velvet Cupcakes, Cream Cheese Frosting, and Cupcake toppers to complete your dessert? Keep reading!
Red velvet ingredients:

2 1/2 cups flower
1/2 cup unsweetened cocao powder
1 tsp. baking soda
1/2 tsp. salt
1 cup butter, softened
2 cups sugar
4 eggs
1 cup sour cream
1(1 ounce) bottle of Wilton Food coloring2 tsp. Wilton Pure Vanilla extract (can also use imitation vanilla)

Directions for Cupcakes:
  1. Preheat oven to 350 degrees F. First you will be mixing flour, cocoa powder, baking soda, and salt in a medium bowl. Set to your side.
  2. In a large bowl beat the butter and sugar with an electric mixer. Have the electric mixer on med. speed about 3-5. Beat in eggs one at a time. Mix in sour cream, milk, food color, and vanilla.
  3. Spoon batter into 30-36 paper-lined muffin cups, Filling each cup about 2/3 full.
  4. Bake for 20-25 minutes or until toothpick test works. (stab cupcake gently, if toothpick comes out clean then cupcakes are done.)
Next its time to make your frosting.

Vanilla Cream Cheese Frosting ingredients:

1 (8ounce) apck of cream cheese
1/4 cup butter, softened
2 tblsp. sour cream
2 tsp. Wilton Pure Vanilla extract (can also use imitation vanilla)
2 (16 ounce) boxes of confectioners sugar (powdered sugar)

Directions for Vanilla Cream Cheese Frosting:
(Notice if piping frosting on cupcakes as seen in photos please double amount in recipe for frosting!)
  1. Beat cream cheese in mixer bowl.
  2. Mix in slowly butter, sour cream, and vanilla extract. until light and fluffy
  3. Gradually add confectioners sugar.
  4. Beat frosting until it is at the consistency you desire.
  5. (to thicken frosting add more powdered sugar/  to thin add 3 drops of milk at intervals between mixing.)
Fondant Flower ingredients:

1 tsp Wilton Vanilla Extract
2 ounces Wilton Fondant
3 dots wilton burgundy food coloring
1/4 cup confectioners sugar


Fondant Flower Directions:
  1. First measure out about 2 ounces of Fondant.
  2. Add  1tsp vanilla extract. then nead into fondant with confectioners sugar. (use confectioners sugar like flower when rolling and kneeding dough)
  3. add 2-3 drops of food coloring.
  4. divide fondant in to four even parts.
  5. Grab part and roll out fondant to about 1/8-1/16 of an inch thick. (thickness is your preference)
  6. Get your daisy cutter the small size.
  7. Cut out 3 flowers for each cupcake.
  8. once finish with that portion of fondant repeat steps 5-8

Tye Cupcakes for the family!

So this weekend I made some tye dye cupcakes for my BF's family. The kids loved it and it made me so happy! : )  These tye dye cupcakes are similar to the originals but have some small tweaks. We used different colors of course. The most interesting thing though is that we flavored the fondant with almond extract! It was abolutely delicous. It was a bit tricky to mix the almond extract into the fondant but well worth the effort. If you would like to see how to make tye dye cupcakes pleas click here.

Mini tier cake!


Mini Tier Cake Pans
I made a cute little mini tier cake for my BF on his birthday!  It wasnt difficult at all. I ordered the kit online from amazon.com.
  • Its basically like making a normal cake.  mix your batter and grease your pans.
  • Cook these for about 15-25min at 350F
  • let cool for 15-20 min
  • Ice each tier individually
  • Carefully place tiers together on top of eachother.
  • Then decorate away. Any way you would like.
This was my first attempt at a mini 3-tier cake. Im pretty happy with it. My BF loved it. Homemade frosting to! For more on my ButterCream Recipe Checkout my on of my cupcake frosting article . I ordered the pans in a kit off of amazon.com.

Thanksgiving Pumpkin cupcake toppers.


Fondant pumpkin cupcake toppers. Looking for something fun and easy to do fo thanksgiving?  Lets make some quick fun and easy cucpcake toppers. 
What you will need.
1lb of orange fondant
1lb of black fondant
rolling pin
rolling mat
veining tool
leaf cut out
small, medium, and large circular cut out

Check out the video I found to get me started on my take on a pumpkin cake topper. Then i added a handle vines and leaves. I even made my own little stand to put the toppers on. : )

TYE DYE Cupcakes!

Fully mixed Batter

Yum! What a wonderful Weekend we had. We made Tye Dye cupcakes. They  were irresistable. Delicously made with tye dye'd batter, home made frosting, and tye dye'd fondant cake topper decortaions. They came together as a delectable masterpiece. If I may say so myself. Lets check out the steps to making them.







Food coloring

  • First things first. Your going to chose any normal size cake box. Double it.
  •  Then were goign to add the ingredients. i.e: eggs, water, and vegetable oil. Then mix it. So now we have to fully mixed packages of cake.
  • After we have fully mixed our batter its time to divvy it up.
  • divvy it up into six bowls. Do your best to divide it evenly.
  • Then we choose six colors.
  • Since this is a tye dye cupcake I chose bright colors and put enough dye to make the batter look flourescent/neon. 
  • Mix in 1 of the 6 colors into each bowl. Color to your preference.
  • 
    Pastry piping bags w/batter
    
  • Once you have formed each of your colors you will need 6 large piping pastry bags.
  • Put each of your colored batters into a pastry bag and twist it to seal it.
  • Next get you cupcake sheet. Put your liners inside.
  • Tip: white liners are best your tye dye will become the design.
  • Your going to cut a very small tip on each of your pastry bag.
  •

  • Then put a small dollup/S shape/line/Squiggle of each color into each cupcake spot.
  •  Fill 3/4 of the way up. 
  • Tip: put very little of each color for each round.  The more layers you end with the more tye dye your cupcake will turn out.
  • When you finish, bake cupcakes at 350F for 18-22minutes.
  • While the cupcakes are baking its time to make our frosting and fondant toppers.
  • Frosting will be a generic white buttercream frosting.

    • put into pastry bag with LG piping tip of your choice.

  • We will also be making Tye Dye cake toppers.
    • Your going to choose 4-5 colors of fondant.
    • Tip: I use white Wiltons Fondant. Then I add coloring.
    • mix them together lightly to where you can still make out each color.
    • roll out to about 1/8" thickness.
    • cut out flower cookie cutters. These flowers are about a 1/2" long.
    • allow to dry for about 20 minutes.
  • When you take your cupcakes out let stand for 20-30 minutes for cooling.
  • We want to frost using piping pastry bag.
  • Then add one of each of your cupcake topper to each one.
  • These cupcakes look amazing in the middle as well! : )

Mini Cupcakes!

 Mini Brownie Cupcakes!


My new Toy!



              Last night we had some family over. I made some mini cupcakes for them with my new machine from Amazon. It is a mini cupcake maker from Bella Cusina!  So I decided to mike mini brownie cupcakes and put frosting on them. They were delicioso! yum. I used a piping bag for decorating the brownie minis with my homemade buttercream frosting. I added vanilla flavoring and red food coloring to it. So I could add an extra kick.  The brownie mix I used this time was a nice easy one. It was Ms Betty Crocker. She has been saving our lives for years. So why not allow her to again?

Brownie Mix:
I used Betty Crocker Fudge brownie Mix.
(this one wasnt from scratch)

Buttercream frosting recipe:
4 cups confectioners sugar (powdered sugar)

Mini Brownie Cupcakes Baking

1/4 cup of milk
2 tsp. vanilla
1 cup/stick of salted butter
(chef's choice to add further flavor 2tsp. or to taste)
 This recipe will make enough frosting for 48-60 mini cupcakes.

Gum Paste Flowers

         
            I made Chrysanthemums and my own take on a wildflower.  My first time practicing and making flowers for cakes and sweets. Had great time doing it. : ) 
  • First you need gumpaste. I purchased Wiltons Gumpaste mix from my local craft store, or you can order it from amazon and ebay.
  • After you have the gumpaste you need a flower cutter and a veining tool, balling tool. For the daisy you need three sizes of daisy cutters and for my wildflower you need a pansie cutter. You will also need any type of leaf cutter.

Chrysanthemums
  • you will need to make 2 of each size flower cut out.
  • using your veinging tool you will curl each petal and over lap your flowers from largest to smallest.
  • you bill a piece of yellow gumpaste into a ball and use a toothpick for texture.
  • with you leaf cut out. cut out 2 leafs per Chrysanthemum.  Use your veing tool to curl petals.
  • Glue pieces together with drop of water. Allow to dry and harden.

Wild Flower
  • Cut out your flowers with a pansie cutting tool.
  • Use your ball tool to curl up the petals on a piece of foam.
  • Put flower in a flower cup and allow to dry and harden.
  • when wild flower is semi hard and no longer pliable make center ball for pollen.
  • make leaves same chrysantemums leaves.

Cupcakes!

Who love cupcakes? Hahaha! Who doesnt?

These are my homemade delicous cupcakes!




Ive always love to bake and cook. Its only now that I have begun to experiment with the artistic and creative side of visuals not just taste.  So for my first experiment. I started with regular old cupcakes.
  • I got wiltons food coloring from the local craft store or you can get from amazon.
  • I made a home made frosting. The homemade frosting is a buttercream frosting.
  •  I divied up the frosting in seperate bowls. Then added some food coloring and mixed. You will add your coloring to your desire of how much you would like and what color you are looking for.  I add my coloring with the tip of a butter knife.  Then I mix with a fork. This will ensure that you can add more coloring to your frosting without an added mess. Tip: Clean as you go. (frosting will be hard to clean if allowed to harden)
  • Next I rustled up the piping bags and the piping tips I wanted to use.  Then I filled the piping bags with frosting.  Tip: Remember to twist and then tie piping bags. Frosting will spill out.
  • Make your cupcakes. I make mine first before making the frosting. So that way they are baking while you are makin your frosting. Tip: Let your cupcakes cool before decorating.
  •  Decorate and have fun!





Buttercream frosting recipe:
4 cups confectioners sugar (powdered sugar)
1/4 cup of milk
2 tsp. vanilla
1 cup/stick of salted butter
(chef's choice to add further flavor 2tsp. or to taste)
 This recipe will make enough frosting for 24 cupcakes.
